Junsai is a traditional water vegetable. Coated in a slippery, gelatinous substance, it grows in large, shallow ponds.
Containing a high amount of dietary fiber, junsai is considered beneficial for both health and beauty. Its mild, refreshing flavor makes it a versatile ingredient, often used in various Japanese dishes—and even as a topping for desserts such as ice cream.
What is junsai harvesting?

Participants ride small boats across calm ponds and pick junsai by hand—an easy, beginner-friendly activity suitable for all ages.
With every harvest, you can feel its unique smooth, jelly-like texture, making it a refreshing and memorable summer experience in rural Japan.
After harvesting, you can choose how to enjoy your junsai experience with optional services:
- Take junsai home (Free of charge)
Bring your freshly harvested junsai back as a local souvenir. - On-site tasting at the farm (+1,000 JPY)
Enjoy freshly prepared junsai directly at the harvesting site. Depending on the day and arrangement, this experience may also take place at PETIT BATEAU CAFE , operated by the Mitane Town Tourism Association. - Cooking experience at Moritake Onsen Hotel (+2,500 JPY)
Have your junsai prepared by professional chefs at a local hot spring hotel and enjoy it as part of a warm, seasonal meal. This option requires a reservation at least 1 week in advance and is available for groups of 5 or more participants.
