Hatahata, Japanese Sandfish
This popular fish can be eaten in a variety of ways: grilled, broiled, or as sushi. Akita Prefecture is particularly famous for it. If you’re in the Shirakami area during winter, try Hatahata that has been caught fresh from the Sea of Japan.
Awabi, Abalone
This delicacy cannot be bought in most places. Try it in Happo Town during the summer months, at Hatahata Kan.
Shottsuru Fish Sauce
This fish sauce is made from salted and fermented hatahata fish. It is often used as a flavoring for Japanese hot pots.
